Pudding chia seeds with yogurt is the perfect combination of nutritious chia seeds, cool yogurt and fresh fruits. This light dish also helps cool down during hot summer days with all the nutrients. With an easy-to-make recipe, housewives can variate the pudding to the taste of each family member.
Accordingly, prepare 3 tablespoons of chia seeds; 1 cup of unsweetened fresh milk (or almond milk/coconut milk); 1/2 cup of Greek yogurt or regular yogurt; 1 - 2 tablespoons of honey (or syrup to go for your preference); 1/2 cup of fresh fruit (strawberries, blueberries, mangoes, or bananas...); a few grains or nuts for decoration of your choice.
Next, add the chia seeds to a small bowl or glass jar, then pour the fresh milk and stir well. Let the chia seeds soak in milk for about 5 minutes and continue stirring again so that the chia seeds do not stick together. Then, cover and put it in the refrigerator to cool for 2 hours or leave it overnight to help the chia seeds bloom and make the pudding more smooth.
When chia seeds have absorbed enough milk and formed a pudding layer, add yogurt and stir gently until the mixture is blended together. If you want the pudding to be sweet and delicious, housewives can add a little honey or siro agave.
Cut the fresh fruit into small pieces and place a layer of fruit on top of chia seed pudding with yogurt. Note that you should use seasonal fruits such as strawberries, blueberries, bananas, or mangoes to add variety and color to the pudding.
