Thanh Son sour meat
Thanh Son sour meat is a specialty dish of the Muong people in Thanh Son district, Phu Tho. The main ingredients include thinly sliced pork (usually Man pig) and fried orange (ripe sticky rice, roasted green beans, ground in small pieces), then kept in a soy sauce or closed container for about 3 - 7 days to naturally ferment.
When eating, diners will feel the clear sour taste, the aroma is both familiar and strange. Sour meat is often eaten with fig leaves, guava leaves, raw vegetables and dipped in garlic and chili fish sauce.
