Located in lane 130 Xuan Thuy street, Cau Giay district, O Hue beef noodle soup is one of the favorite dining addresses for students.
Besides the authentic Hue noodle flavor and affordable price, the restaurant is popular with many diners because the owner is friendly, enthusiastic, and welcoming.
Mr. Tran Van Tuan (49 years old), the owner of the restaurant, said that the restaurant has only been open for more than 2 years, while the older restaurant in Ha Dong district has been open for 5 years.
The restaurant has a rather modest space but is airy and clean. As soon as you enter the door, you will smell the aroma of the hot broth and the glass cabinet containing ingredients such as vermicelli, pig's feet, blood, crab cakes... neatly arranged and delicious.
The owner said his wife is from Hue and her grandmother passed down the recipe for making vermicelli in the authentic Hue culinary style. Diners will feel that the vermicelli at Mr. Tuan's restaurant is a bit special compared to other vermicelli restaurants that have adapted the flavor to suit the Northerners.
Normally, Mr. Tuan will be in charge of cooking the broth and preparing the ingredients. The staff at the restaurant only needs to load the ingredients, pour the broth, and serve the customers.
A full bowl of beef noodle soup at the restaurant will include noodles, pig's feet, blood, crab cakes, beef, ham... full. The broth has the aroma of pineapple, lemongrass, a light spicy taste, rich but not too sweet. In particular, the restaurant's beef is cut loosely and thickly.
To attract customers, Mr. Tuan shared that many factors are needed: “First, we have to cook delicious food with authentic Hue flavors. Second, the service attitude must be cheerful and friendly. For example, if customers come and find the food delicious but the service is not harmonious and cheerful, they will not like it.”
In particular, almost every regular customer who comes to the restaurant is remembered by the owner and asked about them. The owner is always busy, listening to customers' orders, coordinating staff, asking about customers, or helping customers with their vehicles... It is Mr. Tuan's cheerful and friendly attitude that makes customers satisfied, continue to come back, and recommend them to friends.
Mr. Tuan said he has “fans”, especially students. “Many of them come to ask to film the shop and post it on social media, and even ask to take pictures with me. I am very happy and touched,” the shop owner expressed.
The restaurant sells about 250 - 300 servings of Hue beef noodle soup per day. A serving of beef noodle soup at the restaurant costs 35,000 - 50,000 VND, depending on the type of side dish. The restaurant is open from 7am - 11pm, convenient for diners to visit at any time of the day.
