Du Dai village in Quynh An commune, Hung Yen province (formerly Dong Hai commune, Quynh Phu district, old Thai Binh province), about 100km from the capital Hanoi, Du Dai still retains the space of a pure Northern countryside village in Vietnam. In addition to growing rice, people here also make rice paper by making traditional rice paper.
In Du Dai, it is mainly made with white and brown rice paper. This is an indispensable ingredient and is attached to the bowl of Quynh Coi fish soup.


To have delicious banh da, when eaten, they always stay crispy, chewy, rich, not mushy and mushy; people are careful right from the ingredient selection stage.
According to the owners of the production facilities, only those with many years of experience, with their skillful hands, have created a famous banh da to, conquering diners. The secret to creating a rice paper brand in Du Dai craft village lies in the way of choosing delicious rice, the technique of grinding flour and placing the cake at the right ripeness.
The rice paper was then stacked on a bamboo fence and dried throughout the village. The roads and alleys here are the rice paper sections that are leaning towards the walls... creating a peaceful image.




Mr. Nam (a resident of Du Dai) said that his family has been making rice paper for decades, which is quite a difficult job. To have a typical delicious taste, Du Dai rice paper must be dried naturally in sunny weather.
The profession of making rice paper not only preserves the flavor and quintessence of tradition, but also brings a stable income to the people. Holding the secret of a craft village, Du Dai people apply modern technology and machinery to production, giving the craft village more vitality and integration.
Currently, Du Dai village has about 100 producing households. Every day, on average, large production facilities in Du Dai supply the market with about 30 tons of finished cakes.
