Should kale be eaten raw or cooked?
Eat kale raw for the most nutritional value. However, raw kale can be harder to digest because it is tough and fibrous in nature and can cause bloating and gas.
Steaming retains more of kale's antioxidants and minerals than other cooking methods like boiling and pressure cooking, according to a study published in the International Journal of Food Sciences and Nutrition. When lightly steamed or sauteed, kale may be easier to digest and still retain most of its nutrients, including vitamins A, K, and fiber.
