Quán Bò Kho Gánh has received numerous reviews from customers praising the dish's rich flavor, the beef and tendon being thoroughly processed, cooked until tender, retaining a suitable firmness, and evenly infused with spices without being too pungent or overpowering, resulting in a refreshing sensation.
Tony Trần, a Vietnamese expatriate and regular customer, was surprised to learn that his favorite eatery had been awarded a Michelin prize.
“Each time I return to Vietnam, I must visit the restaurant at least twice a week. The grilled bread on a charcoal stove; the broth is not too greasy, with minimal oil. I truly appreciate the flavor at this restaurant,” Mr. Tony Trần said.
Tạ Thị Minh Nguyên, 46, the owner of Bò Kho Gánh, shared that after receiving the award, the number of customers visiting the restaurant increased significantly, particularly international customers accounting for approximately 30% of the total number of customers.
“The secret to the restaurant lies in the traditional recipe combined with three types of medicinal herbs to create a distinctive flavor for the beef stew. Furthermore, the braised beef ribs have been modified, receiving the admiration of many customers,” Ms. Minh Nguyên revealed.
The restaurant's signature beef stew, originally a "signature dish" of Ms. Phúc, the current owner's mother, is a testament to her culinary skills. Ms. Phúc was known for her exceptional cooking abilities, often preparing dishes for weddings and other special occasions. Her beef stew was particularly well-received by customers.
Ms. Nguyên later inherited her mother's culinary skills and combined them with the flavors of Chợ Lớn's Chinese cuisine to create a unique beef stew that has become a staple on the culinary map of Ho Chi Minh City. The beef stew at the restaurant is praised for its traditional flavor.
The appearance of Michelin in Vietnam has provided an opportunity for restaurants and eateries to promote Vietnamese cuisine to international friends, contributing to the enhancement of Vietnam's culinary reputation on the global map.
