Soup is one of the oldest and most popular foods in the world, says Janet Clarkson, author of “Soup: A Global History.”
Mentioning Vietnamese pho in the top 20 best soups in the world, CNN introduced: “The broth is simmered for hours with cinnamon, star anise and other warm spices to create a wonderful aroma for pho. Pho is one of the most well-known Vietnamese dishes in the world, but basically this dish is relatively new, according to Andrea Nguyen, author of The Pho Cookbook”.
According to Andrea Nguyen, pho restaurants today serve many different flavors, but the original beef remains. In 1930, pho was served with slices of raw beef blanched in broth (rare beef).
“Today, pho bo remains the most popular version in Vietnam, with options including the original rare beef, or a combination of rare and well-done beef, flank and tendon,” CNN wrote.
Previously, Vietnamese pho has also been listed many times as one of the best dishes in the world. Typically, the culinary website Taste Atlas ranked beef pho in 3rd place among the 10 dishes with the best meat broth in the world in 2023.
In addition to Vietnamese pho, the list of 20 best soups in the world voted by CNN also includes: seafood soup cooked with palm oil Banga (Nigeria), beetroot borscht (Ukraine), seafood soup bouillabaisse (France), potato and onion soup caldo verde (Portugal), chickpea soup with meat chorba frik (Algeria, Libya and Tunisia).
Next are chupe de camarones (Peru), gazpacho tomato soup (Spain), chicken, fish or meat soup with peanuts (West Africa), gumbo seafood soup (USA), harira tomato chickpea soup (Morocco), kharcho apricot beef soup (Georgia), Lanzhou beef noodle soup (China), mohinga fish noodle soup (Myanmar), menudo (Mexico), moqueca de camarao coconut shrimp soup (Brazil), soto ayam chicken noodles (Indonesia), tom yum goong soup (Thailand), tonkotsu ramen noodles (Japan), yayla corbasi rice soup (Turkey).
