Ngoc Vuong Pho Restaurant (Dong Da, Hanoi) is one of the familiar destinations for many gourmet diners who love pho.
Mr. Vu Ngoc Vuong, owner of the Nam Dinh Pho restaurant chain, shared: “My family has had a tradition of making pho for three generations. In 1993, I followed my father to Hanoi to continue the traditional profession. In 1998, I decided to open the first Nam Dinh beef pho restaurant, starting the journey to develop my hometown cuisine.”
After that, Mr. Vuong continued to expand the Nam Dinh beef pho restaurant on Nguyen Chanh, Vu Pham Ham, Nguyen Tuan and Pham Van Dong streets. On average, this Nam Dinh noodle shop chain sells 2,000 - 3,000 bowls per day.
According to the owner, the broth is the most important part of a bowl of pho. If the broth is fragrant, balanced and harmonious, the pho will be delicious. To create the unique flavor of the pho broth, the key is the secret of seasoning.
To have a delicious pot of broth, the restaurant uses beef bones and beef, simmering continuously for 12 hours. Then, it is left on the stove for 5 to 6 hours before serving to customers.
A bowl of pho from the restaurant impresses diners with its harmonious and delicious flavor. The broth has the sweetness of beef bones, the aroma of cardamom, cinnamon, ginger and dried onions. The beef retains its softness and deliciousness. The accompanying pho noodles are Van Cu village pho, meticulously hand-cut, soft but not broken.
Ms. Nguyen Huyen Minh (Dong Da, Hanoi), a customer of the restaurant, shared: “I have eaten here many times. The pho here is delicious without being greasy, the broth is clear, and the flavors are harmonious. I am impressed that the pho noodles here are soft, with a distinct aroma from the rice.”
Mr. Pham Duy Anh (Ba Dinh, Hanoi), another diner, said: “The pho here is delicious and reasonably priced. The broth is fragrant and well-seasoned. The beef is tender and fresh, served with delicious and attractive pho.”
In addition to pho, the restaurant also serves fried rice and stir-fried pho. Prices range from 50,000 - 100,000 VND/bowl.
