Mr. Hoang Long (Dong Da, Hanoi) - owner of the restaurant "Pho Cuong 23 Hang Muoi" on Huynh Thuc Khang, said that the restaurant is popular thanks to the delicious flavor of the traditional beef pho.
“My family has been cooking pho for three generations. The name “Pho Cuong” is my grandfather’s name. My grandfather has been cooking pho since 1968, counting my father’s generation and mine, it must have been more than 50 years.
To cook a delicious bowl of pho, the cook needs to have a heart. I always keep in mind that I cook for my guests the same way my family eats, and I am always meticulous in choosing ingredients and processing them," Long shared.
The restaurant owner said that both his grandfather and father are currently running pho restaurants. His grandfather's original pho restaurant is in Hang Muoi (Hoan Kiem, Hanoi) and his father's pho restaurant is in Truong Dinh (Hai Ba Trung, Hanoi).
The owner said that his restaurant's pho broth is simmered for 12 hours and is made entirely from beef bones to create a natural sweetness. The restaurant usually uses more than 10kg of beef bones, about 17kg of beef and 30kg of pho to cook beef pho for customers.
Mr. Nguyen Van Dinh (Dong Da, Hanoi) - a customer enjoying beef pho at the restaurant, said: "Every time I come here, I usually order a bowl of well-done beef pho. The beef is sliced with moderate thickness so it still retains its softness and toughness, the beef tendons are crispy. I find the broth rich but still relatively clear, the pho noodles are soft."
Mr. Tran Quoc An (Dong Da, Hanoi), another customer at the restaurant, shared: “I really like eating pho in the old quarter but I don’t always have time to go there to eat. Now, right near my workplace, there is a delicious pho restaurant with authentic flavors, very convenient. The pho at this restaurant is very suitable for my taste. When I have free time, I will go to Hang Muoi to try the original pho restaurant.”
Mr. Long's pho restaurant has just opened in Dong Da but on average sells more than 300 bowls of pho every day and is open from 5am to 2pm. The restaurant serves a variety of pho types such as: rare beef pho, well-done beef pho, rare brisket pho, brisket pho, soft tendon pho... The price of a bowl of pho ranges from 45,000 - 60,000 VND/bowl.
