"Although this is the first year I have made salted egg sticky rice cakes, each day the orders that our workshop receives range from 1,000-2,000 orders. To ensure the quality of each batch of cakes and the consistency of flavors, we only produce within a range of 300-500 cakes. Therefore, the number of regular visitors returning has increased every day," said Ms. Giang Ngoc.
Having been selling salted egg sticky rice for many years, the owner of a bakery on Hang Tre Street, Hanoi was quite surprised because this Mid-Autumn Festival this year, the shop has overloaded orders for salted egg sticky rice, leading to a lack of ingredients and not enough cakes to pay to customers.
Ms. Nguyen Thuy, owner of a food store in Thanh Hoa, revealed the secret to making a delicious salted egg sticky rice cake.
"First of all, the cake crust must be soft, sticky but not mushy, moderate in moderation and have the aroma of grapefruit flowers or natural scent. The filling must be sweet and creamy, fat but not mushy, especially the salted eggs need to be thick, slightly salty and have a dissolved taste in the mouth, not dry," the store owner shared.
In addition to the familiar square sticky rice cake, salted egg sticky rice cake also received great attention from food enthusiasts. Many people also jokingly call this a "fried" moon cake with different filling versions such as chocolate, matcha or mon khoai.
