The Tay ethnic people in Binh Lieu district, Quang Ninh have created a unique flavor of banh cooc mo, different from banh cooc mo in Thai Nguyen or Bac Kan.
This type of cake is quite small, has a pointed shape, looks like a cow's horn, so it is called "cooc mo", because in Tay language, it means cow's horn. The cake is often made on holidays or sold on market days or Sundays, sold at Binh Lieu market.
There are two types of Cooc Mo cake, with and without filling. The cake without filling only has sticky rice soaked in ash water, wrapped in cotton leaves, and dipped in molasses or honey. The cake with filling has the filling of clean, pre-processed pork, wrapped in hairy rice leaves to make the cake fragrant and less boring to eat.
Tai Long Ep Cake
Banh tai long ep can also be called "tay nong ep", "banh to", "banh cau", "xi long cau" or "tai loc". This rustic cake is a specialty of the San Diu people in Quang Ninh, sold a lot at Binh Lieu market.
The way to make this cake is quite complicated, with many steps. In the past, people made the cake by measuring 7 parts sticky rice and 3 parts non-sticky rice. Nowadays, they use sticky rice flour cooked with rock sugar or molasses in a ratio of 1kg of flour to 0.5kg of sugar. Melt the sugar with a little ginger water, then knead the water thoroughly with the flour.
Tai long ep cake has a golden brown color, when eaten it has a chewy and fragrant taste, and is often offered by Binh Lieu people on the altar on holidays or to invite guests to visit their home.
Shoulder cake
Banh vat vai is a rather strange dish from its appearance to its name. The name “vat vai” comes from the fact that this cake can be hung on the shoulder when traveling, easy to enjoy at any time.
Banh vat vai is wrapped in many different shapes and sizes. The cake crust is made from sticky rice flour so it is white, flexible and quite sticky. The filling is made from peanuts and white sugar. The cake is wrapped in banana leaves, when enjoying, diners peel off the leaves bit by bit along the length of the cake.
Nodding Cake
Nodding cake originated from Tien Yen - Quang Ninh, looks similar to pho cake or rolled cake. This type of cake is handmade from rice flour, pure white in color, without filling. Each cake is rolled into a long, soft and flexible roll, when eaten dipped in fish sauce. When holding it in your hand to enjoy, the cake keeps shaking, nodding up and down, that's where the name nodding comes from.
Both old and young people love this cake. When enjoying it, they nod and praise it as delicious.
Silver cake
Banh bac dau is a typical dish of the San Diu people, often appearing on special occasions such as full moon days, holidays and Tet.
This cake is round in shape, covered with a layer of smooth, white sticky rice flour. The crust is made from sticky rice flour, the filling is a mixture of sesame, crushed roasted peanuts, mixed with finely ground white sugar.
Enjoying each piece of cake, diners will feel the sweet taste, the aroma of sticky rice, and the rich taste of peanuts and sesame.
Nowadays, Banh Bac Dau has become a popular culinary dish, sold widely as a rustic dish in Binh Lieu as well as other localities in Quang Ninh.
