At the beginning of 2024, the correspondent Park Jeong-bae of the Chosun newspaper traveled to Hanoi. There, he learned about the culinary culture of Vietnam, particularly phở beef.
"7 o'clock in the morning, the phở stalls along Hoàn Kiếm Street had already opened, and each stall was packed with customers. Signs advertising phở were hung all over the street like traffic signs," the Chosun correspondent wrote in a post.
Correspondent Park also suggested to tourists 4 phở restaurants with their own way of preparation and flavor. At the top of the list is phở beef Cụ Chiêu at Hàng Bồ, Hoàn Kiếm. This is a phở restaurant with a history of over a hundred years, having gone through 4 generations.
"Instead of adding spices like cinnamon and cloves like other restaurants to cook the broth, the restaurant only simmered the bones and beef, ensuring the original flavor of the broth. They also did not leave lemons on the table like most phở restaurants," the Chosun described.
Next, the newspaper listed two famous phở restaurants, Lý Quốc Sư and phở Thìn 13 Lò Đúc. The establishments of the two phở brands have the characteristic of having beautiful seating areas, elegant spaces, unlike street-side phở restaurants. In addition, the higher prices compared to the average also distinguish the two phở brands. Correspondent Park added that the rich and creamy flavor of phở Thìn is a flavor that Koreans will love.
The Chosun suggested that tourists try phở Bát Đàn - a restaurant that usually has a long line of people waiting. "Like phở beef Cụ Chiêu, phở Bát Đàn also does not place lemons on the table. They are proud of the broth they cook. The broth has a sweet, cool, and clear flavor. The phở noodles are thin and the beef is soft. Try ordering the well-done beef and rare beef nạm, the two most popular types of beef here," correspondent Park recorded.
The Chosun correspondent also suggested two phở restaurants in Nam Định - a place known for creating the beef phở dish, namely phở Đán and phở Tạo. The common point of phở in Nam Định is the rich flavor, clear broth, thin and small phở noodles.
