The burnt liver milk tea of a coffee shop in Bac Ninh has recently received great attention from the online community. Although this drink is associated with the name of a specialty in the culinary culture of Kinh Bac region, many conflicting opinions have been raised.
In addition to comments supporting the new creativity, helping to promote Bac Ninh culture, there are still comments expressing "setritude and doubt" about the true flavor of this drink: "Will it be burning? , "I've had camel milk tea, but my liver is still burning", "I don't want to try it after hearing my name"...

Some people even think that this naming method could be a communication trick, to attract customers like some brands in the culinary industry have combined two dishes and drinks with completely opposite flavors.
Some versions of such combinations that have been launched on the market include vermicelli, tofu, shrimp paste, onion milk tea, or pearl beef noodles. In fact, the above dishes have only existed on the market for a short time.
Talking to Lao Dong, a representative of the coffee shop that owns burnt liver milk tea said: "Actually, when making products related to culture, there are always risks. There are products that can still go with us for a long time, such as Asian Asian pearls that have been launched a year ago.
However, there are also dishes that are not like that. Therefore, with products like this, when launched on the market, we also have to closely monitor customer feedback to make appropriate adjustments".

Hot liver abs is a familiar breakfast dish of Bac Ninh people with a darker and more thick broth. A bowl of burnt liver pho usually includes lean meat, heartbroken, bean sprouts... In particular, each bowl of pho will have a few pieces of burnt liver next to it, which is the most unique and attractive highlight of the dish.
The restaurant representative also explained that the creation of burnt liver milk tea was inspired by a familiar dish of Kinh Bac region.
A glass of brown rice milk tea, the soft, chewy jelly is handmade from rice flour inspired by the traditional rice cake fiber of Van Cu village.
The burnt liver is actually a cookies, recreating the image of a typical burnt liver piece, with a foaming, slightly sweet taste with a crispy crust, and a soft, moist inside.
The product was launched on the market in early December 2024 and tested about 2 weeks before. On average, the restaurant sells about 160 cups of burnt liver milk tea on the highest days.
"We are confident that this is the most harmonious combination for the product, ensuring safety and hygiene," said the restaurant representative.
According to the coffee shop representative, when launching this beverage on the market, mixed opinions mainly came from people who have not enjoyed the product.
After using the product, many customers have also had changes in their perception. Some diners were surprised to discover that the burned liver eaten with the ingredients was actually cookies.
However, there are also opinions that the combination of ingredients is not really impressive, the light brown rice tea is not as rich as oolong.
However, this drink is still highly appreciated when promoting the culinary culture of Bac Ninh.
