The fish noodle shop on Phan Van Truong Street (Cau Giay District) is one of the familiar dining addresses loved by many diners because it ensures all the criteria of delicious - nutritious - cheap.
Mr. Tran Ngoc Huy, owner of Bun ca cham De Nhat, said he has opened the shop for more than 4 years. The shop has 3 floors, located right at the intersection of Pham Tuan Tai, Tran Quoc Hoan and Phan Van Truong streets.
According to Mr. Huy, his wife is responsible for managing the quality of the input as well as the flavor of the fish noodle dishes. Every morning, she and the staff wake up early to open the shop and prepare the ingredients for the restaurant.
"For many years, the restaurant has imported fish from familiar sources to ensure input quality. Bun ca cham uses tilapia, bun ca chan uses perch," Huy shared.
A portion of vermicelli with fish sauce includes dry vermicelli, rich garlic and chili sauce and refreshing vegetable broth. The special feature of the restaurant lies in the plate of golden, hot fried fish. Fresh tilapia is carefully deboned, cut into bite-sized pieces and then lightly fried in hot oil, soft and moist on the inside, crispy and delicious on the outside.
Mr. Huy shared that the restaurant has to adjust the recipe to suit the taste of Hanoi diners, and continuously create new dishes and new toppings to compete and create something special with other fish noodle restaurants in the area.
The most popular dishes are fish noodle soup for 35,000 VND and traditional fish noodle soup for 50,000 VND. The restaurant sells about 500 - 600 servings a day.
One of the special things on the menu is the fish roll topping with exclusive recipe.
"This dish includes minced fish meat with wood ear mushrooms and pork, then seasoned with spices, especially pepper for fragrance and flavor. The fish fillet is wrapped around the outside, then coated with flour and fried. It can only be eaten on the same day. If left the next day, it will dry out and not taste as good anymore," the restaurant owner shared.
In addition, the pickled bamboo shoots and fish dipping sauce are also homemade according to the restaurant's own recipe.
The owner shared that he has plans to open a few more locations in Hanoi next year to serve customers who love the fish noodle soup. In addition, he also ensures that the location in Thai Nguyen City has ingredients and flavors that are almost 100% the same as the original restaurant.
