Snow fungus milk soup
Soak snow fungus for about 2 hours until softened, wash, remove roots and then shred finely. Wash peanuts and red dates (remove seeds). Put all in a pot with enough water, bring to a boil, then reduce heat and cook until the mushrooms become thick. Next, add rock sugar and goji berries and stir until dissolved, finally add milk, cook for about 1 minute and then turn off the heat.
Millet - sweet potato - oatmeal porridge
Peel sweet potatoes, wash them, cut them into small pieces and put them in a pot to boil. Add the washed millet, stir well, then reduce the heat and simmer until the millet is soft. During cooking, stir occasionally to avoid overflowing. When the porridge is almost cooked, add instant oats, cook more until the porridge thickens and you can use it, no need to add sugar.
Steamed red apple lotus seeds
Soak dried lotus seeds overnight, wash and drain. Wash red apples, remove seeds, then stuff lotus seeds inside, arrange on a plate and steam for about 15 minutes until soft. Cook the mixture of water, sugar and honey until completely dissolved to make syrup, then pour on lotus seeds and red apples when still hot. Can eat directly if you don't like the sweet taste.
Beef stir-fried celery
Wash beef, slice thinly into strips and marinate with light soy sauce, a little thick soy sauce, cornstarch and egg whites. Mix well, add a little cooking oil and let it soak for about 15 minutes. Remove celery roots, wash, cut into pieces; prepare more shredded ginger and minced garlic.
Heat a pan with oil, add beef and stir-fry quickly until it has just changed color, then take it out. Next, sauté ginger and garlic until fragrant, add celery and stir well. When celery is just cooked, season with salt, return the beef to the pan with chili peppers, stir quickly.
Finally, add a little light soy sauce, stir well several times and then turn off the heat. When the dish is done, the beef is tender, the celery is crispy, and delicious while still hot.
