According to the book "Delicious and Nutritious Dishes" (Women's Publishing House), pork stir-fried with sour bamboo shoots is not only attractive but also very suitable for daily meals when it only takes 20 minutes to prepare.
Main ingredients
- 150g sour bamboo shoots, 120g lean pork, 1 green chili pepper, 1 red chili pepper.
Meat marinating seasoning
- 1/8 teaspoon salt, 1 tablespoon soy sauce, 1 tablespoon cooking oil, 1 teaspoon cooking wine, 2 tablespoons filtered water, 1 tablespoon rice flour.
Processing spices
-1/4 teaspoon seasoning powder, 10g minced ginger, 10g minced dried shallots, cooking oil.
How to do
Step 1: Pre-processing and marinating the meat
Wash pork, slice thinly to taste. Put the meat in a bowl, add all marinating spices including salt, soy sauce, cooking oil, cooking wine, filtered water and flour. Mix well and marinate for about 10 minutes to soften the meat and absorb the flavor.
Step 2: Sauté sour bamboo shoots
Heat a little cooking oil in a pan, add the shredded sour bamboo shoots and stir well until the bamboo shoots are firm and fragrant. Pour out into a separate bowl.
Step 3: Sauté shallots and ginger until fragrant
Add a little cooking oil to the pan if needed. Sauté dried shallots and minced ginger until lightly golden, fragrant.
Step 4: Stir-fry meat
Put the marinated meat in a pan, stir quickly over high heat until the meat is just cooked. Do not stir-fry for too long to maintain the tenderness and sweetness of the meat.
Step 5: Complete the dish
Add the stir-fried sour bamboo shoots with green chili, shredded red chili to the pan. Season to taste, stir well for about 1–2 minutes for the ingredients to blend together.
Step 6: Presentation
Scoop the dish into a plate, serve hot with white rice will be the most delicious.
Tips to make food more delicious
The secret of the dish lies in the sour bamboo shoots. You should choose fresh, tender and firm bamboo shoots. After removing the old splinter, shred them and wash them, soak them in rice water. Change the water once a day, after about 3-4 days, the bamboo shoots will be soft, white and have a natural sour taste.
