Preparation materials
Potatoes: 500g.
Pork belly: 250g.
Da Lat green peppers: 20g.
Dried shallots: 2 bulbs.
Spices: Salt (1 small spoon), pale soy sauce (2 large spoons), seasoning powder (1/4 small spoon), a little cooking oil.

Pre-processing
Wash pork belly, slice into bite-sized squares.
Peel potatoes, slice into squares that match the meat.
Remove green peppers from stems and seeds, slice into small pieces; slice dried shallots.
Preparation method
Step 1:
Stir-fry meat: Heat cooking oil in a pan, sauté shallots until fragrant, then add pork belly and stir-fry.
Step 2:
Fry until golden brown: Keep the heat low, stir-fry until the meat releases excess fat and turns pale yellow but not dry.
Step 3:
Stir-fry potatoes: Pour potatoes into a pan and stir well with the meat, season with salt.
Step 4:
Cook until cooked: Cover and simmer over low heat. If the pan is too dry, you can add a little water to prevent the potatoes from burning. Cook until the potatoes are golden brown and the water is gradually running out.
Step 5:
Finally, add green chili, seasoning powder, soy sauce and stir well until the chili is cooked and the heat can be turned off.

Small tips
For meat: Do not stir-fry the meat for too long from the beginning, because during the process of stewing with potatoes, the meat will continue to secrete fat to help the dish be shiny and smooth.
For potatoes: Fresh potatoes usually have water, but if the potatoes have run out of water before being cooked, add a little filtered water.
