The full moon day of the 7th month is one of the important days in Vietnamese culture and on this day, every family will prepare trays of vegetarian rice to worship their ancestors.
Accordingly, housewives can try making vegetarian rice noodles - one of the simple but nutritious dishes, very suitable for families to enjoy on special days.
To make vegetarian rice noodles, housewives need to prepare ingredients including 40 grams of sesame seeds, 40 ml of sunflower oil, 250 grams of shiitake mushrooms, 1 fresh ginger, 3 cloves of garlic, 1.25 liters of vegetable broth. salt, 450g tofu, 2 carrots, 100g peas, 2 tablespoons soy sauce, 1 tablespoon rice vinegar, 5ml sesame oil, 200g rice noodles, 1 lemon, coriander and some basic spices.
Once you have prepared all the above ingredients, roast the sesame seeds in a pan over medium heat until the sesame seeds are golden brown and fragrant. Next, heat sunflower oil in a large pot, add shiitake mushrooms, ginger, garlic and a little salt and stir well for about 4-5 minutes until the mushrooms release their liquid.
Add vegetable broth to the pot and simmer before adding tofu, carrots, peas, soy sauce, rice vinegar and sesame oil. Continue to boil and cook until carrots are tender, about 12 to 15 minutes.
Add the rice noodles to the pot of broth and boil again until the noodles are very tender, about 6 to 8 minutes. Remove the ginger and garlic from the pot and scoop the noodles into a bowl, sprinkle on some roasted sesame seeds, coriander and add a few lemon wedges. The basic vegetarian rice noodle dish is complete and ready to enjoy.
