Ravioli is one of the traditional Italian pasta dishes, when combined with 5 types of cheese and brown sauce, this dish becomes especially attractive and suitable for the taste of every child.
To make 5 cheese ravioli with brown sauce, housewives should prepare all the ingredients including: For the ravioli dough - you will need 300gr of all-purpose flour, 3 eggs, 1/2 teaspoon of salt, 1 tablespoon of olive oil.
For the cheese filling - you need about 50gr Parmesan cheese, 50gr Mozzarella cheese, 50gr Ricotta cheese, 50gr Fontina cheese, 50gr Gorgonzola cheese and a little ground black pepper and parsley.
For the brown sauce you will need about 100g unsalted butter, 4 - 5 fresh sage leaves, 1/4 cup roasted pine nuts (optional) and a little salt and ground black pepper.
Make the ravioli dough in a large bowl, mixing the flour and salt. Next, add the eggs and olive oil and knead the dough gently until the dough and eggs are smooth and elastic. Cover the dough with plastic wrap and let it rest for about 30 minutes.
In another bowl, mix together the 5 grated cheeses and add the black pepper and parsley. Make sure the cheese filling is well mixed so each ravioli gets a full flavor.
Using the dough that has been rested for enough time, divide the dough into 2 equal parts. Roll each part of the dough into a rectangle, about 1 - 2mm thick. Place a small spoonful of cheese filling about 5cm apart on one piece of dough. Use a brush to lightly brush water around the filling to help it stick. Place the second piece of dough on top and lightly edge around the filling to remove air.
Use a knife or ravioli mold to cut into pieces. Bring water to a boil with a little salt and add the noodles and cook for 3-4 minutes until each ravioli floats.
In a medium saucepan, melt the unsalted butter and add a few sage leaves and cook until the butter turns brown and smells nutty. Add the roasted pine nuts and season with salt and black pepper to taste.
Remove each ravioli piece to a colander and drain before adding the ravioli to the sauce pan, mix well to let the sauce penetrate the noodles. Arrange the ravioli on a plate and sprinkle with Parmesan cheese and parsley to make it more attractive and delicious.
