Health benefits of cheese
Homemade fresh cheese is delicious and healthy. Many studies have shown that cheese is a source of many essential nutrients for the body such as protein, omega-3, omega-6 fatty acids, carbohydrates, calcium, magnesium, potassium and many other vitamins and minerals.
A study published in the journal Nutrients found that cheese contains all the amino acids the body needs. Adding cheese to your diet can strengthen bones, improve digestion and reduce the risk of cancer, muscle cramps, heart disease, asthma and high blood pressure.
How to make fresh cheese at home
Ingredient
- 1.5 liters of whole milk
- Vinegar, lemon juice, curd or buttermilk
- Thin fabric or cheesecloth
Making
- Wash the pot, pour in the milk and cook over low heat until it boils
- Meanwhile, place a metal sieve or colander on top of another pot, then line the sieve with cheesecloth or cheesecloth.
- Stir the milk occasionally to prevent scum from floating on the surface and burning at the bottom of the pot.
- When the milk begins to foam and float, add four tablespoons of lemon juice to the pot. You can also replace lemon with buttermilk, curd or vinegar.
- Stir the milk well after adding lemon, at this point the milk will begin to coagulate. When the milk is completely curdled, you will see the water separate from the milk.
- Pour the mixture into the lined sieve that you prepared earlier. Gather the edges of the cheesecloth and lift the bundle to drain until the water stops dripping.
- Keep the top of the cloth and wash it with cold water, wrap the cheese tightly in the cloth, then place it in a bowl or plate and use a heavy object on top.
- Let stand for at least 30 minutes until the cheese is completely curdled. The longer you leave the weight on, the harder the cheese will be.
- Lift the heavy object and open the cloth to get the fresh cheese.
