To make about 8-10 mooncakes with green beans, prepare 200 g of peeled green beans, 80-100 g of sugar, 40 g of cooking oil, 20 g of sticky rice flour and a little salt.
The crust part includes 150 g of flour, 100 g of baking sugar water, 25 g of cooking oil and one egg yolk. If you like the cake to have a beautiful yellow color, you can prepare a little more mixture of egg yolk and cooking oil to spread on the cake surface.
Green beans should be chosen with even grains, bright yellow color, and no strange odor. Baking sugar water can be bought ready to shorten preparation time.
How to do
First, wash green beans, soak them in water for about 3-4 hours to soften, then steam until cooked. When the beans are still hot, mash or grind them with sugar and a little salt.
Put the green bean mixture in a non-stick pan, simmer over low heat. Add cooking oil little by little and stir continuously until the filling becomes sticky, smooth, no longer sticky to the pan. Mix the sticky dough with a little water, add it to the filling and continue simmering until the mixture is combined into a block. Let cool and then divide the filling into equal parts, roll them into rounds.
To make the shell, mix sugar water, cooking oil and egg yolks. Strain flour, knead gently until it becomes a soft, smooth dough block. Cover tightly and let the dough rest for about 30-45 minutes.
Divide the cake crust, roll thinly and place the green bean filling in the middle. Cover tightly, roll it up and put it in a mold. Gently press the mold to shape it, then arrange the cake on a tray lined with baking paper.
Preheat the oven to 180 degrees C. Bake the cake for about 7-8 minutes, then take it out, spray a thin layer of water and let it cool a little. Gently spread the egg yolk mixture on the surface of the cake, continue to bake for about 10-15 minutes until the cake turns golden brown.
The cake after roasting should be completely cooled before enjoying. After about 1-2 days, the crust is usually softer and has a more beautiful color. The cake can be stored in a sealed box, in a dry, airy place.
