Preparation materials
300g soft beef
1 broccoli plant
1/2 carrot
1 small onion
3 cloves of garlic
oyster sauce, soy sauce, seasoning granules, sugar, pepper, cooking oil
A little tapioca starch if you want softer beef.
How to do
Step 1: Pre-processing ingredients
Wash beef quickly, pat dry and then slice thinly across the flesh so that it is not tough when stir-frying. Marinate the meat with a little oyster sauce, soy sauce, pepper, minced garlic and a little tapioca starch for about 15 minutes.
Peel broccoli into bite-sized pieces, soak in diluted salt water and wash thoroughly. Peel carrots, slice thinly. Peel onions, cut into wedges.

Step 2: Blanch vegetables
Boil a pot of water, add broccoli and carrots and blanch quickly for about 1-2 minutes, then take out and soak in cold water to keep the vegetables green and crispy.
You should not blanch them for too long because when stir-frying, the vegetables will easily soften and lose their natural sweetness.

Step 3: Roast beef
Heat a pan with a little cooking oil, sauté minced garlic until fragrant, then add beef and stir-fry quickly over high heat. When the meat is just medium-rare, pour it on a plate to set aside.
Stir-frying beef for too long can easily make it tough, so stir-fry quickly and keep the heat high.

Step 4: Complete the dish
Add a little oil to the pan, add onions, broccoli and carrots and stir-fry. Season with seasoning, oyster sauce, and a little sugar to taste.
When the vegetables are just cooked, return the beef to the pan, stir well for about 1 minute and then turn off the heat. Sprinkle more ground pepper to make the dish fragrant.

Beef stir-fried with broccoli should be served when still hot. The dish has beautiful colors, soft beef, crispy and sweet vegetables, suitable for daily family meals.
