First, heat the pan and add a little cooking oil before adding pork belly and stirring evenly at medium heat. This is how to let the meat reduce fat and turn yellow on the edges, making the meat more delicious. When the meat is firm, scoop up and saute until fragrant with the meat.

Next, put the drained eggplant in a pan and stir quickly. Season with a little more turmeric juice (or turmeric powder) to create a characteristic golden taste for the dish. Season with spices including fish sauce and seasoning to taste for the family.

To make the eggplant cook soft and absorb spices, don't forget to add a little filtered water, cover and simmer over low heat for about 5-7 minutes.

When the water in the pan thickens, the eggplant is soft but not mushy, add chopped scallions and a few slices of fresh chili and stir well, then turn off the heat. Pork belly stir-fried with turmeric should be served with white rice to enjoy the full flavor.
