To prepare delicious pan-fried chicken breast with passion fruit sauce, prepare ingredients including 2 fresh chicken breasts of about 400g, 3 ripe passion fruit, 2 cloves of garlic, 1 small shallot, a little parsley or basil for decoration.

Accompanying spices include 1 teaspoon olive oil, 1/2 teaspoon salt, 1/4 teaspoon ground black pepper, 1 teaspoon honey, 1/2 teaspoon paprika and 1/2 cup filtered water.

The first step is to pre-process chicken breast, wash it with diluted salt water, then use a paper towel to completely dry the surface of the meat. This method helps the chicken meat to be evenly golden brown when pan-frying. Use a knife to gently cut a few diagonal lines on the surface of the chicken breast to make the spices easily absorbed quickly.

Passion fruit is halved, used a spoon to scrape off the pulp and seeds, put in a sieve, then filter out the juice. Garlic and shallots peel, mince. Parsley or basil wash, chop finely to prepare for decoration.

Next is the meat marinating step. In a large bowl, add the pre-processed chicken breast, add 1/2 teaspoon salt, 1/4 teaspoon pepper, paprika and 1/2 teaspoon olive oil. Use your hands to spread the seasoning mixture evenly on the chicken breast, ensuring the meat absorbs well. Marinate for about 15-20 minutes at room temperature or put in the refrigerator for about 30 minutes if you want the meat to absorb more flavor.

After the chicken breast has been seasoned, pan-fry with 1/2 teaspoon of olive oil, stir each side for about 4-5 minutes until the meat is golden brown. Avoid pan-frying for too long, it will make the meat dry. After the meat is cooked, put the chicken breast on a plate and let it rest for a few minutes before cutting.

During this time, make passion fruit sauce by roasting chopped shallots and garlic until fragrant. Then, pour the filtered passion fruit juice and 1/2 cup of water into the pan. Add 1/2 teaspoon of honey, a little salt and pepper to adjust the flavor. Boil the sauce mixture and reduce heat for about 5-7 minutes until the sauce is slightly thickened.

Next, housewives should slice chicken breast into bite-sized pieces or leave them whole as you like. Arrange the chicken on a plate and then spread the processed passion fruit sauce evenly on top. Add a little parsley or chopped basil to enhance the aesthetics and flavor of the dish.
