Family meals for the 15th day of the 7th lunar month are of great concern to housewives. According to that, vegetarian spring rolls will be one of the new and creative dishes.
The vegetarian spring rolls bring a fragrant and refreshing flavor with a slight twist by the characteristic Thai fish sauce and chili sauce. This combination creates a unique flavor, both simple and rich, which helps to add variety to the offerings.
To make the vegetarian spring rolls, housewives need to prepare the following ingredients: 15g dried mushrooms; 7g dried shiitake mushrooms; 40g dried glass noodles; 30ml vegetable oil; 4 cloves of garlic; 150g taro; 15g cabbage; 120g carrots; 30ml soy sauce; 15g sugar; coriander; 2 stalks of green onions; 12-14 large spring roll wrappers; 1 egg yolk and some basic spices.
With Thai-style fish sauce and chili sauce, prepare 40ml fish sauce, 20ml lime juice, 20g sugar, 40ml water, 1 clove of garlic, 2 green Thai chilies (available at supermarkets), 2 lime leaves.
Soak the mushrooms and shiitake mushrooms in hot water for about 15 minutes until soft. Then, drain the water and chop into small pieces. Soak the glass noodles in water for about 7-10 minutes until soft, then cut into 5cm pieces.
Next, prepare the dipping sauce by mixing fish sauce and lime juice in a small bowl. Add sugar to the fish sauce mixture and stir well until the sugar dissolves completely. Add a little water and continue stirring. Mince the garlic and Thai chilies, chop the lime leaves, and add them to the fish sauce mixture. Adjust the spiciness to your liking.
Heat the vegetable oil in a pan, add minced garlic and pepper, and sauté until fragrant before adding the mushrooms, shiitake mushrooms, taro, cabbage, and carrots. Add 1 tablespoon of soy sauce and sauté for 3-4 minutes until the taro is soft. Add the glass noodles, chopped coriander, soy sauce, sugar, and a little water used to soak the mushrooms. Stir-fry until the glass noodles are cooked and well coated with the seasonings, finishing with a sprinkle of fresh green onions.
Place each spring roll wrapper on a plate, add the filling, and roll like regular spring rolls. Fry in a pan for 5-6 minutes until golden brown. The spring rolls can also be deep-fried in an air fryer at 260°C for 7-8 minutes until golden brown.
