Prepare materials
1 tilapia (about 800g).

Vegetables: 1/2 onion, 5 celery stalks, 2 scallions.
Spices for sauce: 2 large spoons of steamed chili sauce, 1 large spoon of white wine, 1/4 small spoon of salt, 300ml broth.
Spices for flavoring: sliced ginger, minced ginger, minced garlic, dried chili, peppercorns, cooking oil (about 4 large spoons).
Implementation steps
Step 1: Preliminary processing and marinating fish
Clean the fish, gently scrape on the body. Marinate the fish with salt and wine for about 15 minutes to remove fishy smells and absorb spices.
Peel onions, shred them and arrange them evenly on the bottom of the heat-resistant baking plate.
Place the marinated fish on top of the onion, sprinkle minced ginger and drizzle 1 tablespoon of cooking oil on the fish.
Step 2: Grill the fish for the 1st time
Preheat the oven to 220°C.
Put the fish in the middle-floor oven for about 20 minutes, then take the fish out.
Step 3: Prepare spicy sauce
Use another pan, add 3 tablespoons of cooking oil. When the oil is hot, add ginger, garlic, scallions, dried chili and peppercorns and stir-fry until fragrant.
Next, add steamed chili sauce and cook together.
Pour 300ml of broth into a pan, simmer over high heat until boiling, then reduce to low heat and continue to simmer for about 3 minutes.
Finally, put the water spinach cut into the sauce pan, stir quickly and turn off the heat.
Step 4: Grill the fish for the 2nd time
Scoop out the entire sauce that has just been boiled and pour it evenly all over the fish.
Return the plate of fish to the oven (still keeping the temperature at 220°C). Bake for another 5 - 8 minutes for the fish to deeply absorb the sauce and create a fragrant aroma.

Small tips to make dishes more delicious
Replace the type of fish: If you don't have tilapia, you can replace it with grass carp, carp or red tilapia, which are all very delicious.
Notes about spices: Because steamed chili sauce usually already has a salty taste, plus the initial fish marinating step, you should consider not adding too much salt when cooking the sauce to avoid the dish becoming salty.
