Sweet and rich pork rib potato soup
Potato soup with pork ribs is a familiar dish, suitable for family meals thanks to its natural sweetness from bones and soft potatoes.
200g pork ribs, 3 potatoes, 1 shallot, scallions, coriander, 1 tablespoon cooking oil, salt, seasoning powder, sugar and ground pepper.
Wash pork ribs, blanch in boiling water for about 3-5 minutes and then wash again to remove impurities. Peel potatoes, cut into bite-sized pieces and soak in diluted salt water for about 10 minutes. Sauté shallots with cooking oil until fragrant, add ribs and potatoes and stir-fry briefly with spices. Add about 500ml of water, cover and simmer for about 20 minutes, regularly skim off foam to make the broth clear. When ribs and potatoes are soft, season to taste, sprinkle scallions, coriander and pepper before serving.
Nutritious potato tomato beef soup
If you want to change the taste, potato soup cooked with beef and tomatoes is an attractive choice with the sweetness of the meat, the mild sourness of tomatoes and the butteriness of the potatoes.
100g minced beef, 50g minced pork, 1 potato, 3 tomatoes, 2 shallots, scallions, coriander, cilantro, 2 tablespoons cooking oil and spices such as salt, sugar, fish sauce and MSG.
Peel potatoes, cut into bite-sized pieces; cut tomatoes into wedges. Sauté shallots until fragrant, add tomatoes and stir-fry until soft, then add beef and minced pork, stir well to firm. Pour enough water, add potatoes and cook for about 15-20 minutes until soft. Finally season to taste, add scallions, coriander and cilantro to enhance the flavor of the soup.
Both soups have simple processing methods, easy-to-find ingredients and are suitable for daily meals. Can be served with hot rice or vermicelli to enhance the flavor.
