Sardines are small fish, soft meat, characteristic fatty taste and can be processed into many attractive dishes. This type of fish is often used to braise, tomato sauce or combined with familiar ingredients in family meals.

Sardines in tomato sauce
2-3 fresh sardines, 2 tomatoes, shallots, scallions, garlic, a little cooking oil, fish sauce, sugar, pepper and seasoning.
Wash sardines, remove gills and intestines, wash with water and drain. You can fry the fish briefly to make the meat firm and limit it from mushing when cooking.
Wash tomatoes, chop finely. Sauté shallots and garlic until fragrant, add tomatoes and stir-fry until soft. Add a little water, season with fish sauce, sugar and seasoning to taste.
Put sardines in a pan, simmer for about 10-15 minutes to let the fish absorb the sauce evenly. When the sauce thickens, sprinkle with scallions and pepper and turn off the heat.
Sand crab tomato sauce has a mild sour taste, rich flavor, soft fish meat, suitable for eating with hot rice.
Braised sardines with pepper
3-4 sardines, shallots, garlic, pepper, chili as desired, fish sauce, sugar, caramel sauce and a little cooking oil.
Wash sardines, drain. Marinate the fish with fish sauce, sugar, pepper, minced shallots and a little caramelized water for about 15-20 minutes.
Put the fish in a pot, add a little water and cook over medium heat. When the braised water boils, reduce the heat to low so that the fish cooks slowly and absorbs the spices.
Braise until the water is reduced, the sauce thickens, and the fish has a beautiful golden brown color. Add pepper and chili if you like spicy flavors.
