Mid-Autumn Festival is an occasion for families to gather together to break the feast and watch the moon. Therefore, housewives can personally prepare delicious cakes to treat family members. Accordingly, grilled cakes in the shape of a cute pig both help make the Mid-Autumn Festival feast more unique and a meaningful gift for young children.
To make piglet baked cakes, for the crust part, it is necessary to prepare 240g of flour, 160g of sugar water for baked cakes, 30g of cooking oil and 1 egg yolk. For the green bean filling, including 200g of ground green beans, 70g of sugar, 75g of cooking oil, 10g of flour dissolved in 40ml of water with a little black bean.
Start by simmering the soft green bean filling. Soak green beans with sugar and 200ml of hot water for 1 hour to expand, then add 200ml of water and put the pot on the stove to boil, reduce the heat to low, remove the foam until the beans are soft.
Put green beans in a blender and blend until smooth, then strain through a sieve. Lower heat, divide 75g of cooking oil into 3 parts, slowly add each part to the pot and stir well to mix. Continue to add the bowl of flour mixed with water and simmer with green beans.
After about 45 minutes of continuously simmering over low heat, the filling blends together into a smooth, flexible block, not mushy, which meets the requirements.
Next, sift flour into a large bowl, create a round hole in the middle, then add baking sugar water, cooking oil and egg yolks, use a wooden spoon to mix the mixture evenly. Continue to knead manually to help the mixture become a fine dough block and then wrap in nylon for about 1 hour.
Divide the green bean filling into small balls of about 40gr and 30gr of flour. Put the filling inside the cake crust and roll it into round pieces, skillfully use hands, toothpicks and forks to shape pig ears and noses, and attach 2 black bean seeds to make eyes.
A small tip for housewives to help make the cake crust golden and crispy is to bake twice. The first time, heat the frying pot to 150 degrees C for 10 minutes. Gently place the baby pig cake in a tray, bake at 180 degrees C for about 7 minutes.
Then, lift the baking tray, spray filtered water on the surface and wait for the cake to cool. Apply a thin layer of chicken egg yolk mixed with fresh milk to the cake crust.
Continue to bake for the second time at a temperature of 190 degrees Celsius for 5 to 7 minutes until the cake crust turns beautiful golden brown, then put it on a plate and wait for it to cool completely and you can fully enjoy a rich Mid-Autumn Festival flavor.
