On slightly chilly autumn days, a braised dish with rich flavor will be a great choice for a family meal. Accordingly, housewives can refer to the new and flavorful sesame oil braised chicken with simple but not too fussy processing methods.
To make sesame oil braised chicken, prepare ingredients including 500g of chicken (should choose the thigh or thighblade with bones removed); 1 large ginger root; 2 sprigs of scallions and some spices including sesame oil, oyster sauce, soy sauce, cooking oil, cooking wine (Hoa Dieu wine), a little salt and white pepper.
Chicken meat needs to be pre-processed with diluted salt water, cut into bite-sized pieces and then use paper towels to pat the surface dry. This method will help when marinating chicken, the meat will be evenly and quickly absorbed. Next, put the chicken meat in a large bowl, marinate with a little salt, white pepper, 2 tablespoons of sesame oil and 1 tablespoon of oyster sauce for about 15 minutes.
Peel fresh ginger, cut into thin strips; wash scallions and cut into small pieces.
Place a deep pan on the stove, add 1 tablespoon of cooking oil and 1 tablespoon of sesame oil and heat up. When it boils, add half of the shredded ginger and sauté until fragrant over medium heat, then take it out on a plate and set aside.
Take advantage of the remaining oil in the pan, add the remaining half of the fresh ginger and sauté until fragrant, then add the whole chicken and stir-fry quickly. Add 1 tablespoon of soy sauce and 1 tablespoon of oyster sauce, stir well so that the spices absorb into each piece of chicken.
Cover the pot, reduce heat and simmer for about 25 minutes until the chicken is soft. About 5 minutes before turning off the heat, add 1 pot of cooking wine to help increase the richness.
When the sesame oil braised chicken is cooked, scoop it out onto a plate, put the crispy fried ginger on top and sprinkle with a little scallions to complete the basic dish. Enjoy it immediately with hot rice to fully feel the delicious flavor.
