With the natural sweetness from pork bones blended with the butteriness and softness of lotus root, this soup is especially suitable for family meals.

To make the dish, housewives need to prepare quite simple ingredients including 300g of pork bones, 200g of lotus root and familiar spices such as salt, seasoning powder, scallions and cilantro.

First, the pork bones are chopped into bite-sized pieces, washed clean. Peel off the outer skin of the lotus root and then cut into small pieces or thick slices. Careful preliminary processing helps the dish retain the clarity of the broth and the natural flavor of the ingredients.

Next, boil about 1 liter of water and then put the pork bones in to blanch briefly for a few minutes to remove impurities and odors. After blanching, the bones are taken out and washed clean under running water. The pot is also washed again before starting the stewing process.

Put pork bones and lotus root in a pot, add about 1.5 liters of water and bring to a boil over high heat. When the water boils, reduce the heat and continue to simmer for about 60 minutes. The slow simmering process helps bones release natural sweetness, while making lotus root soft but still retaining its characteristic richness.

When the amount of water in the pot reduces to about half, season with salt and seasoning powder to taste. Before turning off the heat, add chopped scallions and cilantro to enhance the aroma of the soup.

The finished product is a bowl of soup with clear broth, light sweetness from bone broth, soft and slightly fragrant lotus root. The dish not only makes family meals more attractive but also brings a cool and comfortable feeling.

According to the experience of many housewives, to make the soup have the best flavor, you should choose old lotus roots, with a lot of pulp, usually lotus roots harvested in winter. This type of lotus root has a brown skin, less water than summer lotus roots, but when cooked, it is softer, more buttery and has a richer flavor.
