Chocolate Butter Pudding
Ingredient:
1 ripe avocado
50 grams dark chocolate
30ml honey or rock sugar
65ml fresh milk
2.5ml vanilla
A pinch of salt
Peel the avocado, remove the seed and cut into small pieces.
Cut chocolate into small pieces for easy melting.
Place the chocolate in a heat-resistant bowl and heat in a double boiler or microwave for about 30 seconds, then stir until the chocolate melts smoothly.
Put the cut avocado into a blender or use a mortar and pestle to puree.
Add in melted chocolate butter, honey (or rock sugar), milk, vanilla and a pinch of salt. Blend or mix until smooth and combined.
Taste and adjust the sweetness to your baby's preference. If your baby likes it sweeter, you can add a little honey or rock sugar.
Pour the pudding mixture into small cups or molds, then refrigerate for at least 1 - 2 hours to allow the pudding to set and have a smooth texture.
You can decorate the pudding with some fresh fruit like banana, strawberry, or some chia seeds for more appeal.
Chocolate nut milk
Ingredient:
65 grams of almonds or cashews (or walnuts, chia seeds as desired)
45 grams dark chocolate
250ml water
15ml honey
2.5 grams vanilla
A pinch of salt
Making:
If you are using almonds or cashews, soak them in warm water for 4-6 hours (or overnight) to soften them and make them easier to grind. If you are using other nuts like walnuts, soak them for 2-4 hours.
After soaking, rinse the seeds and place them in a blender. Add 2 cups of water (or nut milk) to make it easier to blend smoothly. Blend for 1 - 2 minutes until the mixture is smooth and free of lumps.
Use a cheesecloth, strainer or nut milk filter bag to filter out the pulp, leaving only the smooth milk. You can save the pulp to make cakes or add to other dishes.
Once you have the nut milk, put it in a pot and heat it up. Once the milk is warm, add the dark chocolate and honey, stirring until the chocolate is completely dissolved into the milk.
If desired, you can add 2.5 grams of vanilla and a pinch of salt to enhance the flavor.
Taste and adjust sweetness to your baby's taste.
Heat the milk over low heat until it is just hot enough, but do not let it boil. Once heated, let it cool slightly before giving it to your baby.
