Next, do the crust by pureeing the cookies until smooth. Mix the cookies with melted butter to blend together. Pour the mixture into a cake pan with a diameter of about 23cm, using a spoon to press tightly to form a smooth cake base. Place the mold in the refrigerator for about 30 minutes to help harden the cake base.
Blend the cream cheese in a large bowl before adding a little sugar and continue to beat until smooth. Add some fresh milk, eggs, sour cream, vanilla extract, lemon peel and flour and continue to beat until the mixture is blended together.
Pour the creamy mixture onto the crust and then place the cake pan over the baking tray, pour hot water over the tray so that the water is about half the height of the pan. Baking in the oven has been heated to 175°C for about 30 minutes.
After baking, turn off the heat and leave the cake in the oven for about 3 hours to prevent the cake from cracking. Continue to put the cake in the refrigerator overnight to help cheesecake get enough cold.
Prepare the strawberry coating on the cake with the boiled strawberry jam with water and sugar over medium heat. In a small pot, dissolve the cornstarch with a little cold water, then add it to the pot and stir well until the mixture thickens. Let the mixture cool and add the sliced strawberries, mix gently to make the mixture absorbed evenly.
Take the cake out of the refrigerator, gently remove the mold and pour the strawberry coating onto the cake surface, arranged well to create a beautiful coating. Garnish the surface of the cake with a few fresh strawberries or mint leaves to create an eye-catching look.
