In the bustling atmosphere of the year-end holiday season, housewives can prepare a variety of dishes and special desserts to welcome Christmas. Among them, Pinwheel cookies promise to be the perfect choice for Christmas parties.
To make Pinwheel cookies, housewives need to prepare 225g unsalted butter, 200g white sugar, 1 egg, 1 teaspoon vanilla extract, 300g all-purpose flour, 1/2 teaspoon baking powder, 1/4 teaspoon salt, 1/2 teaspoon cinnamon powder (optional), 1/4 teaspoon unsweetened cocoa powder and red and green food coloring.
Next, prepare the cake batter in a large bowl, beat the butter and white sugar until the mixture becomes smooth and fluffy. Add the eggs and vanilla extract and continue to beat well. In another bowl, mix the flour, baking powder, salt and cinnamon. Mix the two bowls of flour together and form a soft dough.
Divide the dough into three equal parts, leaving one part white. Mix one part with red food coloring, and one part with green food coloring. Cover each part with plastic wrap and refrigerate for at least 30 minutes.
Once the dough is chilled, spread a piece of parchment paper on a work surface and roll out the white dough to about 3mm. Next, roll out the red and blue dough similarly before placing it on top of the white dough in the order of your preferred colours.
Roll the dough layers together tightly into a long roll, cover with plastic wrap and refrigerate for another 30 minutes to firm up.
Preheat oven to 180 degrees C, line a baking tray with baking paper. Remove the dough roll from the fridge, cut into 5mm thin slices. Arrange the slices on the baking tray, about 2 - 3cm apart.
Bake for about 10 to 12 minutes until golden brown and let cool before serving.
