1. Control portion sizes
People with diabetes should only eat a moderate amount of vermicelli, should not eat it full or eat it completely instead of rice in many consecutive meals. A reasonable diet for a meal with vermicelli for people with diabetes should only account for 1/4 - 1/3 of the total amount of carbohydrates in a meal. Eating too much vermicelli in one meal can cause blood sugar to spike suddenly, making it difficult to control the disease.
2. Choose pure vermicelli
Pure vermicelli soup usually has a lower glycemic index compared to vermicelli soup made from cassava flour or vermicelli soup mixed with other ingredients. When buying vermicelli soup, diabetics should choose products with natural colors, not too white, no colorants or additives, with clear origins.
3. Combine vermicelli with protein and fiber-rich foods
When eating vermicelli, people with diabetes should combine it with green vegetables and lean protein-rich foods to slow down the sugar absorption process and limit post-eating blood sugar spikes.
4. Do not eat vermicelli in the late evening
Evening is a time when the body is less active, so the ability to metabolize sugar is worse than during the day. Therefore, people with diabetes should not eat vermicelli late in the evening, especially before going to bed, to avoid prolonged blood sugar spikes overnight.
5. Processing vermicelli suitable for diabetic patients
People with diabetes should choose to eat low-fat, low-spice vermicelli dishes, simply prepared such as:
- Vermicelli soup with vegetables and lean meat.
- Blended vermicelli is bland, with lots of green vegetables.
- Stir-fried vermicelli with little oil, lots of vegetables.
Diabetics should avoid eating stir-fried vermicelli with a lot of grease, vermicelli mixed with a lot of sweet sauce, vermicelli eaten with fried dishes,... because it easily causes increased blood sugar, weight gain, and adversely affects cardiovascular health.
