Benefits of soaked green beans
Deepalakshmi Sriram, a nutritionist at Sree Balaji Medical College (Chennai, India), said that eating soaked green beans every day has many benefits. Because they contain many nutrients that aid digestion, support immune function and improve overall health.
Green beans are a source of vegetable protein, fiber, vitamins (such as vitamins A, C, K, and B group), and minerals (such as iron, magnesium, potassium, phosphorus), which have the effect of supplementing nutrition for the body. They are also good for the digestive system, help control blood sugar levels and improve cardiovascular health.
According to Deepalakshmi Sriram, soaked green peas are also a good source of protein and fiber which helps in weight loss and aids digestion.
“Soaking the beans breaks down the phytic acid in the beans and helps in better absorption of nutrients like iron, zinc and calcium. They have a low glycemic index and are a good snack for people with diabetes,” says Deepalakshmi Sriram.
Green beans are also rich in antioxidants, such as flavonoids and polyphenols, which help protect cells from free radical damage. If eaten daily, they can help slow down the aging process of the skin and reduce the appearance of wrinkles.
How much soaked mung beans should I eat per day?
According to Deepalakshmi Sriram, although the consumption of soaked mung beans may vary depending on individual activities and needs, ideally, you should consume about 1/2 to 1 cup of soaked mung beans per day.
Excessive consumption can cause digestive problems such as bloating and may increase the risk of uric acid formation. Therefore, you need to strictly follow portion control to get the benefits without the risks.
Soak properly: Soaked mung beans need to be soaked for enough time (about 6-8 hours) to help remove anti-nutrients (such as phytate) and increase the ability to digest and absorb nutrients.
Be careful for people with kidney problems: Green beans contain purine, a compound that can be converted into uric acid, causing problems for people with gout or kidney disease. These people should consult their doctor before eating a lot of green beans.
