3 pieces of mackerel
3 tomatoes

How to do
Step 1: Pre-processing mackerel
Wash mackerel with diluted salt water or ginger to reduce fishy smell and drain.
You can marinate it lightly with a little salt and pepper for about 10 minutes to make the fish taste richer when processing.

Step 2: Briefly fry the fish
Heat a pan with cooking oil and then fry mackerel until lightly golden on both sides.
This step helps the fish to be firmer and not mushy when cooked with tomato sauce.

Step 3: Make tomato sauce
Wash tomatoes and cut them into wedges. Peel shallots and garlic, mince.
Sauté shallots and garlic in cooking oil until fragrant, then add tomatoes and stir-fry until soft. Add a little sugar to make tomatoes smooth and create a harmonious sweet and sour taste.

Step 4: Cook fish with tomato sauce
Put the fried mackerel in a tomato sauce pan, add a little filtered water and cook over low heat for about 10-15 minutes.
While cooking, lightly pour the sauce onto the fish surface so that the fish absorbs the spices evenly.

Step 5: Complete the dish
Add scallions and chili and turn off the heat. You can sprinkle with a little ground pepper to make the dish more fragrant.
Sweet mackerel with tomato sauce should be served when hot, eaten with white rice.
