How to make simple Mediterranean cod tomato sauce at home

Tomato sauce cod is a typical dish of the Mediterranean region, with a light, nutritious taste and not too fussy in processing.

The prepared ingredients include: 400g cod (can be replaced with tilapia fillet), 300g cherry tomatoes, 50g seedless black olives, 2 cloves of garlic. 1/2 onion, olive oil, 1 teaspoon of dried oregano leaves, lemon juice.

The specific method is as follows:

First, you need to wash the fish and then use a paper towel to pat it dry and marinate the fish with salt and pepper for about 10 minutes. With cherry tomatoes, you can cut them in half, thinly slice onions and mince garlic.

After marinating the fish, pan-fry the fish with olive oil for about 2 minutes on each side and then put it on a plate.

Next, sauté onions, garlic, cherry tomatoes until fragrant, add a little olive oil and stir well for about 5 minutes until tomatoes are soft to form a thick sauce.

Next, put black olives, oregano and lemon juice in a pan and stir together. Finally, put fish back in the pan, pour sauce on and simmer for about 5 minutes to absorb the flavor.

Finally, arrange the fish on a plate and pour the sauce on top. The dish has the natural sweetness of the fish mixed with the mild sourness of tomatoes and the characteristic aroma of olives.
