If you are a vegetarian, the grilled radish skewers below will be a great suggestion for you.

According to the U.S. Department of Agriculture's Agricultural Research Service, beets are rich in protein, carbohydrates, fats, amino acids, fatty acids, phytosterols, minerals, fiber, and phytonutrients. These nutrients make beets a great choice for vegetarians looking to boost their antioxidant, anti-tumor, and physical functions.

Beetroot skewers have a beautiful natural dark red color. Here is a recipe for 20 - 25 beetroot skewers that are perfect for vegetarians.

How to make beetroot skewers

Ingredient:

- 1 medium beet or 2 small beets (peeled and grated)

- 3 large potatoes (boiled and mashed)

- 20ml olive oil

- A little chopped coriander

- 1 onion, chopped

- Salt

- Chaat masala

- Garam masala

- Amchur

- Pepper

Making:

- Heat Vietnamese sausageo and add 15ml olive oil.

- Put grated beetroot in a pot, cook over low heat for 5 - 10 minutes.

- Add mashed potatoes, chopped onions and coriander.

- Add salt, chaat masala, garam masala, amchur and pepper to taste.

- Mix these ingredients well so that the deep red color of the beets covers the potatoes.

- Set this mixture aside to cool.

- Once the mixture has cooled, roll it into flat balls.

- Now take a flat non-stick Vietnamese sausageo, add a teaspoon of olive oil and add a batch of beets, cook over low heat until they turn brown.

- If you like it crispy, you can prepare a mixture of cornstarch and water, dip the skewers made from red radish in it and then coat them with a layer of banh mi crumbs before frying.

- Serve hot with a little coriander or mint sauce.
