Pearl milk tea is a drink originating from Taiwan (China) and has become popular in many countries. Besides the traditional version, milk tea combined with fresh fruit is increasingly loved thanks to its cool taste, reducing greasiness and being easy to customize according to preferences.
The appeal of this drink lies in the harmony between tea flavor, natural sweetness from fruit and chewy pearls. Instead of using pre-mixed syrups, the recipe below utilizes fresh fruit to enhance the flavor and natural color.
Materials
1/2 cup dried pearls
1 glass of fresh mango, strawberry or kiwi
2 bags of green tea or black tea
4 glasses of water
2 tablespoons of honey or maple syrup
1/2 cup of almond milk or soy milk
Mint leaves and fresh fruit for decoration
Implementation
Step 1: Make tea
Heat water and soak tea bags for about 5 minutes. Then let the tea cool completely.
Step 2: Cook pearls
Boil 4 cups of water in a pot. When the water boils, add pearls and stir gently to avoid sticking to the bottom of the pot.
Boil for about 15 minutes or until the pearls turn dark and reach the desired softness. Turn off the heat, continue to incubate in hot water for about 10 minutes.
Take pearls out, wash them quickly in cold water and put them in a bowl. Mix with honey or maple syrup to create sweetness and maintain shine.
Step 3: Blend the fruit mixture
Wash the fruit, peel if necessary and then cut into small pieces. Put in a blender with almond milk or soy milk, blend until the mixture is smooth.
Step 4: Completion
Put pearls in the bottom of the glass. Add ice cubes if desired.

Tips to make drinks tastier
To make pearls soft and chewy, do not add them to water when they are not fully boiled. After cooking, pearls are best when used for 3-4 hours.
You can replace mangoes with strawberries, kiwis, dragon fruit or peach blossoms depending on the season. If you want a lighter flavor, replace vegetable milk with fresh coconut water.
