According to the book "Delicious and Nutritious Dishes" (Women's Publishing House), the five-spice duck stew is not too elaborate but requires meticulousness in the preliminary processing and seasoning stages.

The necessary ingredients to prepare include 300g of duck meat (about 1/4 of a duck), 10g of ginger, 5 cloves of garlic and 3 anise flowers. In addition, to prepare delicious and attractive dishes, it is necessary to have spices including 2 tablespoons of wine, 2 tablespoons of white vinegar, 1 teaspoon of soy sauce, 1 teaspoon of sugar, 1 tablespoon of tapioca starch and 1 tablespoon of cooking oil.

The processing method is extremely simple, housewives can easily make it at home. First, the duck meat is washed and chopped into bite-sized pieces. To remove the characteristic smell of ducks, you can use wine and ginger to rub on the surface of the meat before rinsing again with clean water.

Boil a pot of water and then blanch the duck meat for about 10 minutes. This step helps remove impurities and excess fat, making the dish more delicious. After blanching, take the duck meat out to drain. Next, heat a pan with a moderate amount of cooking oil. Add sliced ginger and crushed garlic and sauté until fragrant. When the aroma rises, add the duck meat and stir well over medium heat.

During the stir-frying process, the duck meat will gradually firm up and release natural fat. This is the time to add alfalfa and the remaining spices such as soy sauce, sugar, wine and white vinegar to stir well so that the meat absorbs the spices.

Then, pour about 400ml of boiling water into the pot. Boil and reduce to low heat so that the meat is slowly simmered until soft. When the amount of water in the pot reduces to about half, dissolve the flour with water and add it to create consistency for the sauce. Continue to simmer until the sauce is thick and evenly sticks around each piece of duck meat, then you can turn off the heat.
