Lemon chicken salad
- 125 grams of cooked millet
- 70 grams of chopped cucumber
- 70 grams cherry tomatoes, cut in half
- 30 grams of chopped red onion
- 30 grams of chopped fresh parsley
- 30ml olive oil
- 15ml lemon juice
- Salt and pepper to taste
- In a large bowl, mix together cooked millet, cucumber, cherry tomatoes, red onion and parsley.
- In another small bowl, whisk together olive oil, lemon juice, salt and pepper.
- Drizzle the dressing over the millet salad and mix well.
- Eat cold.
Mango and millet salad
Ingredient:
- 125 grams of cooked millet
- 1 ripe mango, peeled and diced
- 65 grams of chopped red bell pepper
- 30 grams of chopped red onion
- 30 grams of chopped fresh coriander
- 30ml lemon juice
- 15ml honey
- Salt and pepper to taste
Making:
- In a large bowl, mix together cooked millet, mango, red bell pepper, red onion and coriander.
- In another small bowl, whisk together lemon juice, honey, salt and pepper.
- Drizzle the dressing over the millet salad and mix well.
- Eat cold.
Greek Millet Salad
Ingredient:
- 125 grams of cooked millet
- 65 grams of chopped cucumber
- 65 grams cherry tomatoes, cut in half
- 30 grams of chopped red onion
- 30 grams of crumbled feta cheese
- 30ml olive oil
- 15ml red wine vinegar
- 5 grams dried oregano
- Salt and pepper to taste
Making:
- Mix cooked millet, cucumber, cherry tomatoes, red onion and feta cheese in a large bowl.
- In another small bowl, whisk together olive oil, red wine vinegar, oregano, salt and pepper.
- Drizzle the dressing over the millet salad and mix well.
- Eat cold.
Watermelon feta cheese salad
Ingredient:
- 125 grams of cooked millet
- 250 grams of watermelon, diced
- 65 grams of crumbled feta cheese
- 30 grams sliced red onion
- 30 grams of chopped fresh mint leaves
- 30 grams of chopped fresh parsley leaves
- 30 grams chopped walnuts
- 30ml olive oil
- 30ml lemon juice
- Salt and pepper to taste
Making:
- Mix together cooked millet, watermelon, feta cheese, red onion, mint leaves, parsley leaves and walnuts in a large bowl.
- In another small bowl, whisk together the olive oil and lemon juice. Season with salt and pepper to taste.
- Pour dressing over salad and mix well.
- Eat salad cold or at room temperature.
