1. Carrot Muffins
Ingredient
- Shredded red carrots: 2 bowls
- Condensed milk: 50 - 60ml
- Milk powder: 20 grams
- Dried fruit: As needed
- Fresh milk: 70ml
- Take a non-stick pan and stir-fry the grated carrots until the water evaporates.
- Add 70ml of fresh milk. Cover and cook until carrots are soft, then add milk powder and cook thoroughly.
- Add condensed milk, stir well until the mixture has the right consistency.
- When the mixture is done, let it cool.
- Spread butter and flour inside the cake pan. Only fill the pan 1/2 full with the batter.
- Preheat the oven to 180 degrees Celsius for 5 minutes. Place the mold in the air fryer and bake at 170 degrees Celsius for 10 minutes.
- Take the cake out and enjoy.
Roasted Carrot Soup
Ingredient
- 3 diced carrots
- Butter: 20ml
- Black pepper powder: 1.5 grams
- Cumin powder: 2.5 grams
- Honey: 5ml
- Water: 125ml
- Oregano: 2.4 grams
- Fresh lemon juice: 1 fruit
- Vegetable broth
- Salt: To taste
- Cooking oil: 5ml
Making
- Set the oven to 200 degrees Celsius to preheat.
- Grease a baking tray with oil. Add carrots, pepper and butter. Bake until carrots turn light brown.
- Place roasted carrots, oregano and water in a food processor. Blend until smooth.
- Add butter to a pan and add cumin seeds and simmer for a minute. Add grated carrots, honey, lemon juice, pepper, salt and vegetable stock to the pan. Boil the mixture for 5 - 10 minutes.
- Eat hot.
Sweet potato meatballs
Ingredient
- Boiled sweet potatoes: 200 grams
- Fox nuts: 50 grams
- Peanuts (roasted and crushed): 15 grams
- Green chili (chopped): 1 fruit
- Ginger (chopped): 2.5 grams
- 4 chopped mint leaves
- Coriander leaves (chopped): 100 grams
- Lemon juice: 1 fruit
- Fennel seeds: 2.5 grams
- Coriander powder: 2.5 grams
- Sesame seeds: 15 grams
- Garam masala: 2.5 grams
- Salt: To taste
Making
- Dry roast Fox nuts over low heat. Grind and make into powder.
- Mash sweet potatoes, add Fox nut powder, crushed peanuts, coriander leaves, chopped chili, ginger, lime juice and salt.
- Mix well, make into small cutlets, sprinkle with sesame seeds.
- Serve hot with mint and coriander sauce.
