According to the book "Delicious and Nutritious Dishes" (Women's Publishing House), goat stew has a fairly simple recipe, suitable for making at home and only takes about 60 minutes to complete.
Materials and preparation
Main ingredients: Goat shank (400g), potatoes (200g), carrots (80g), leeks (50g).

Spices:
Group A: 2 large spoons of wine, 4 large spoons of oyster sauce, 12g of rock sugar, 1 large spoon of fish sauce.
Group B: 2 cups of broth, 4 large spoons of vegetable oil, 5 slices of ginger, 5 cloves of garlic, 20g cinnamon, 4 anise fruits.
Pre-processing:
- Wash goat shank, chop into pieces with bones.
Peel potatoes and carrots, wash, and dice.
- Cut the leeks into short pieces, leaving the white root and the green leaves separate.
Preparation method
1. Fry goat meat: Put 3 tablespoons of oil in a pan and heat to medium heat, add goat meat and fry over high heat until golden brown, then take it out.
2. Fry vegetables: Put potatoes and carrots in a pan and fry until golden brown, take out and set aside.
3. Sauté spices until fragrant: Take another pot, add 1 large spoon of oil, add ginger and garlic and sauté until fragrant, then add goat meat and stir well.
4. Add flavoring: Continue to add anise, cinnamon and pour water into the goat meat pot.
5. Seasoning: Simmer over high heat until boiling, then add group A seasoning mixture.
6. Stew meat: Cover the pot, simmer until the goat meat is tender. Then add the potatoes and carrots that have been fried and continue to simmer.
7. Finish with leeks: Boil until the water in the pot is only about 1/4 left. Add the white base of the leeks first and boil for a while, then add the green leaves.
8. Present: Finally pour into a clay pot, bring to a boil again and you can enjoy.

Small tips from chefs
- After frying, potatoes and carrots should wait for the stewed goat meat to be cooked before adding it to avoid mushing.
- To check if the goat meat is tender, you can easily skewer the meat with chopsticks.
- The longer it takes to cook this dish, the richer and tastier the flavor will be.
