Sichuan tofu (Mapo Tofu) is a famous dish with a combination of the softness of young tofu, the fattyness of beef and especially the characteristic spicy flavor of Chinese cuisine.
According to the book "Delicious and Nutritious Dishes", with only 25 minutes of preparation, you can make a delicious dish with the right flavor.
Preparation materials
Young tofu: 400g.
Ground beef: 100g.

Spices
Miso soy sauce: 1 large spoon.
1 large spoon of vegetable oil.
1/2 cup.
Cornstarch (cornstarch/cornstarch): A little.
Chili powder, pepper powder, ground pepper: 1 small spoon for each type.
Scallions, minced ginger, minced garlic: 1 small spoon for each type.
Implementation steps
Step 1: Pre-processing tofu
Wash tofu, cut into small, square pieces to taste.
Boil a pot of water, put the beans in to boil until the bean pieces float to the surface of the water, then take them out.
Soak the beans immediately in cold water with a little salt for about 15 minutes, then take them out to drain. This step helps the beans become tougher and not mushy when cooked.
Step 2: Stir-fry the meat and make the sauce
Heat a pan with cooking oil, add minced ginger and minced garlic and sauté until fragrant.
Add minced beef and stir-fry until the meat is cooked and firm.
Add pepper powder, chili powder, miso soy sauce and cooking oil to the pan and stir-fry together to create color and spicy flavor.
Step 3: Cook beans
Pour the dried young tofu into the pan. Shake the pan lightly or stir gently to let the tofu absorb the sauce without breaking.
Pour 1/2 cup of broth into the pan, add pepper salt. Simmer over high heat until the water boils, then reduce heat and simmer for about 5 more minutes.
Step 4: Completion
Mix a little tapioca flour with filtered water, pour slowly into the pan and stir gently to make the sauce slightly thicker.
Turn off the heat, pour the dish into a bowl. Sprinkle more scallions and ground pepper on top to decorate and enhance the aroma.

Small tips to make dishes more delicious
About miso soy sauce: This is a type of soy sauce originating from Japan (currently there are many types produced by Vietnam). Miso soy sauce has a rather salty taste, so when preparing this dish, you should not add too much salt to avoid making the dish too salty.
You can adjust the amount of chili powder and pepper powder depending on your family's spicy taste.
