Steamed clams with sweet wine and olive oil is a dish with a strong Mediterranean flavor. The combination of fresh clams, olive oil and sweet wine not only creates a perfect harmony but also increases the richness and novelty of the dish. This is an ideal choice to treat family members on the weekend.
To make steamed clams, housewives need to prepare 1.5kg of clams (white clams or flower clams are fine); 60ml of pure olive oil; 6 cloves of garlic; 5gr of black coffee powder; 50gr of green olives; 150ml of sweet white wine; 75ml of sweet wine; 20gr of parsley and some other basic spices.
Housewives, heat olive oil in a cast iron pot over medium heat, then add minced garlic and saute for about 2 minutes. Be careful not to let the garlic burn, as this will ruin the delicious flavor of the dish.
Once the garlic is fragrant, add a little black coffee powder and sea salt. Stir well for about 10 seconds to combine the spices with the olive oil and garlic. Next, add the cleaned clams to the pot, along with the green olives, white wine and sweet wine and cover the pot to steam for about 10 to 12 minutes.
Once the clams have fully opened, add the chopped parsley and stir everything together. Pour the clams onto a large plate, and sprinkle with the remaining parsley for garnish.
Steamed clams with wine and olive oil are best enjoyed hot.
