Western cuisine in general and duck curry in particular are not framed by one recipe, but are "have what you have". This is a flexible, generous and highly adaptable culinary culture of river people. Ms. Dang Thi Ly (Long Tuyen ward, Can Tho city) suggests how to cook family duck curry.
Prepare ingredients (for 4-5 people)
Siamese duck meat: 1.5 kg.
Sweet potatoes: 500g.
300ml thick coconut milk (most water) and 1 liter diluted coconut milk.
Unsugar fresh milk: 100ml.
Curry seasoning: 1 packet of curry powder (10g) and a little cashew oil (or 1 jar of curry oil).
Lemongrass: 5-7 branches (chopped, cut into sections) and 2 tablespoons of minced lemongrass.
Roasted and crushed peanuts.
Shallots, garlic, ginger, white wine.
sugar, salt, seasoning powder, fish sauce, MSG, cooking oil.
Implementation steps
Step 1: Pre-processing duck meat
Use crushed ginger mixed with a little white wine and granulated salt, rub thoroughly on the entire duck body for about 10 minutes, then wash it off with cold water and drain. Cut the duck into bite-sized pieces, avoid cutting too small because when stewing, the meat will shrink.
Step 2: Prepare sweet potatoes
Peel sweet potatoes, cut into bite-sized pieces. Cut to where and soak immediately in a basin of diluted salt water to prevent sweet potatoes from darkening. Then take them out, wash them, and drain.
Step 3: Marinate duck meat until flavorful
Marinate duck with: 1/2 pack of curry powder, 1/2 jar of curry oil, minced lemongrass, minced garlic, minced shallots, 1 tablespoon seasoning, 1.5 tablespoons sugar, 1/2 teaspoon MSG, 1 tablespoon fish sauce and 100ml unsweetened fresh milk (helps duck quickly soften and become fragrant).
Mix well and let the meat absorb the spices for at least 30 - 45 minutes.

Step 4: Stir-fry and cook the meat
Place a large pot on the stove, add 2 tablespoons of cooking oil and heat up. Add the remaining curry powder, cashew oil, crushed lemongrass, minced garlic and shallots and sauté until golden brown.
Add the duck meat and stir-fry over high heat until the meat is completely tender.
Pour 1 liter of coconut water into the pot (water must cover the meat surface). Reduce to medium heat, cover and simmer the meat for about 25 - 30 minutes until the duck is tender.
Step 5: Complete the dish
When the duck meat is soft, put the sweet potatoes in the pot. Continue to cook for about 15-20 minutes until the sweet potatoes are soft and cooked.
Season again to taste (sugar, salt, seasoning). Finally, pour 300ml of thick coconut milk into the pot, stir gently. Wait for the curry water to boil slowly again, then turn off the heat immediately to maintain the most perfect fat content.
Pour the dish into a bowl, sprinkle with peanuts and you can enjoy it immediately.
