Carrot Muffins
Ingredient:
- Oatmeal: 30 grams
- Sugar: 10 grams
- Carrots: 20 grams
- Milk: 10ml
- Curd: 10ml
- Cooking oil: 10ml
- Cinnamon powder: 2 grams
- Baking powder: 1 gram
- Baking soda: 1 gram
- Walnuts: 5
- Vanilla essence: 1ml
- Place the curd, oil and icing sugar in a large bowl and beat until smooth.
- Add oatmeal, salt, baking powder and a pinch of salt.
- Sift all the dry mixture into the wet mixture by adding a little water.
- Add warm milk slowly.
- Add grated carrots, cinnamon powder and chopped walnuts.
- Mix well and pour the dough into greased cup molds.
- Preheat a deep steamer for 10 minutes, bake for 45 - 50 minutes over medium heat.
- Insert toothpick, if toothpick is not clean, bake for another 5 - 10 minutes.
- Let cool completely then remove the cake from the mold and enjoy.
Protein rich ragi soup
Ingredient:
- Chopped onion: 1 bulb
- Ginger: 1 small piece
- Garlic: 5 - 6 cloves
- Green chili: 1 chopped
- Spring onion
- Broccoli with stem: 1/4
- Carrot: 1
- Mushrooms: 100 grams
- Red bell pepper: 1 fruit
- Young corn peas: 125 grams
- Beans: 50 grams
- Salt to taste
- Tofu: 100 grams
- Ragi: 15 grams
Making:
- Saute chopped onion, ginger, garlic, green chillies and spring onions in a little oil.
- Add other chopped vegetables
- Cover and cook for 10 minutes over low to medium heat.
- Add 100 grams of masala tofu.
- Make a paste with 3 tablespoons of ragi and water and add to the soup.
- Cook for 5 minutes over medium heat.
- Turn off the heat and squeeze half a lemon
- Garnish with green onions and serve hot.
Rainbow Salad
Ingredient
- Apple: 30 grams
- Orange: 30 grams
- Papaya: 30 grams
- Banana: 40 grams
- Pomegranate: 20 grams
- Corn: 20 grams
- Tomato: 10 grams
- Green bell pepper: 10 grams
- Yellow bell pepper: 10 grams
- Salt to taste
- Pepper: 2.5 grams
- Curd: 10ml
Making:
- Cook corn for 10 - 15 minutes.
- Chop tomatoes, bell peppers (green and yellow), and all the fruits mentioned above.
- Take a bowl and add all the chopped ingredients and cooked corn in it.
- Sprinkle with salt and pepper and mix gently.
- Add curd to cover and enjoy.
