How to make delicious spinach and asparagus soup

Housewives can change their weekend menu with spinach and asparagus soup, which is nutritious but has a refreshing and delicious flavor.

Accordingly, spinach and asparagus are known as two ingredients that provide a lot of nutrients and are very good for health.

Spinach contains many antioxidants, vitamin C, vitamin A and iron to support the process of improving resistance and good for the eyes.

Asparagus is rich in fiber, folate and vitamin K, which helps the digestive system function effectively and protects the cardiovascular system.

The combination of spinach and asparagus creates a dish rich in fiber, low in calories but full of nutrients necessary for the human body.

To make spinach and asparagus soup, housewives need to prepare 300g fresh spinach; 200g asparagus; 1 small onion; 2 cloves of garlic; 500ml chicken broth (or vegetable broth); 200ml unsweetened fresh milk; 1 tablespoon butter; salt, black pepper and olive oil.

In addition, housewives can prepare a little fresh cream to make the soup richer.

Next, wash the spinach and asparagus with cold water. The spinach should be soaked in diluted salt water to remove dirt, then rinsed and drained.

For asparagus, remove the old and tough roots, then cut into 2 - 3cm pieces. Onions need to be peeled and chopped, garlic minced.

Heat olive oil and butter in a saucepan. Once butter has melted, add onion and garlic and saute until golden brown.

Next, add the asparagus to the pot, stir well for about 2 minutes to absorb enough spices. Then, add chicken broth (or vegetable broth) to the pot and continue to boil. When the water boils, reduce the heat and cook for about 5-7 minutes until the asparagus is soft.

When the asparagus is tender, add the spinach and cook for another 2-3 minutes, but be careful to keep the spinach green.

Once the ingredients are cooked, turn off the heat and let cool slightly. Then, use a blender to puree the mixture until smooth. If the mixture is too thick, you can add a little more broth to get the desired consistency.

Pour the soup back into the pot and simmer, adding the milk and stirring well. Continue to simmer for about 3 - 5 minutes before seasoning with salt and black pepper to taste.

If you want the soup to be more creamy, housewives can add a little fresh cream on top before the family enjoys it.
