1. Beetroot smoothie
Ingredient:
- 1 cup beets
- 1 cup mixed berries
- 1/2 cup spinach
- 1/2 banana
- 1 cup of water
- 1 teaspoon lemon juice

2. Beetroot Salad
Ingredient:
- 2 beets (boiled)
- 1/4 cup walnuts (chopped)
- 1/4 cup crumbled feta cheese
- 2 tablespoons coriander (chopped)
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- Salt and black pepper to taste
Method:
- Peel the beets and cut into cubes.
- Mix all ingredients well.
- Chill salad in refrigerator for at least 30 minutes before serving.
3. Beetroot soup
Ingredient:
- 2 beets (chopped)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 1 piece of ginger (chopped)
- 4 cups vegetable broth
- 1 tablespoon olive oil
- Salt and black pepper to taste
- Fresh parsley for garnish
Method:
- Heat olive oil then add onion and garlic and saute until soft.
- Add beets and ginger to the pot, cook for 5 to 7 minutes.
- Pour vegetable broth into pot. Boil for 20 to 25 minutes until radish is tender.
- Put the soup in a blender and blend until smooth.
- Pour the soup into the pot and season with salt and pepper to taste.
- Garnish with coriander and serve hot.
4. Beetroot juice
Ingredient:
- 2 beets
- 1 apple
- 1 carrot
- 1 piece of ginger
- Water (if needed)
Method:
- Put beetroot, apple, carrot and ginger into juicer.
- If the juice is too thick, add a little water to dilute and enjoy.
